Every Gate Gourmet unit has a standardized culinary operating model in place, to best focus on the customer needs and to turn quality raw materials into delicious meals that will be served on board. Gate Gourmet delivers thousands of meals every day all over the world.
Menu development
Our menu design process starts with understanding the culinary expectations of our customer’s guests. Market and data insights, culinary trends, nutrition, and sustainability are all essential and integral parts in our menu design drivers.
Supply chain
Our culinary teams are prioritizing seasonal, and as much as possible, locally sourced ingredients for their menu design, supporting organic and fair-trade produce if available, ensuring overall product quality and consistency of supply.
Food preparation
Deliveries with fresh ingredients are made daily. We separate the preparation process from the cooking process, starting with our Central Recipe Assembly, where ingredients are washed, sanitized, cut, marinated, and prepared.
Food production
For the cooking process we apply advanced production techniques that provide healthier, safer and higher quality food. Our culinary artists shape and craft these raw and fresh ingredients into new textures, forms and flavors to delight all palates.
Portioning & packing
We taste and validate the quality of our food before it goes into portioning, plate setting and packaging. Through technology we implement food-safety procedures like our food traceability system across our entire process flow.
Delivering to aircraft
Our operational departments make sure we deliver to the flights on time, while complying with highest security measures. Our flight tracker systems connect to our master production schedule to automatically identify delayed flights.
